Busy Family Meal Plan

Week 17 – (Mar 2 – Mar 8)

This is a super busy week for us. We have a tournament, basketball games, Ash Wednesday, Orchestra concert, and baseball practices. I’m almost thinking I should start posting these as a calendar as that’s what us busy parents live off of!

Sat – Tournament (no meal planned)

Sun – Pork Loin

Mon (Baseball Practice & two Basketball Games) –  Cuban Sandwiches with waffle fries ruffles – we ran out of time to prepare the meal as our baseball practice time changed for our oldest from 7 to 6, so we had to adjust quickly and drop the ruffles.

Tues (Fat Tues) – Church Pancake Supper – We helped at the church to cook this meal as it was intended to benefit the scout troop that both boys are in.

Wed (Early Practice and Games) –  Fish Tacos – Super quick meal as we used tilapia and that cooks in less than 10 minutes. I cooked the tilapia with a bit of Tony Chachere’s  on top. To go with the tacos, we had Pico de Gallo, lettuce, cilantro and a little bit of Franks hot sauce drizzled on top and we had a less than thirty minute meal (including eating and clean up).

Thurs (Orchestra Concert) – Creamy Crockpot Crack Chicken – Only addition to this was to add a can of Rotel and a packet of taco seasoning. We served this over baked potatoes, but plan to morph it into other meals like nachos, tacos, or sliders.

Fri – (Baseball practices for Kenneth & Matthew) – Cheese Pizza – Lent and Friday, so we need to do something without meat. These are just straight up pizzas from HEB and put into the oven. Nothing fancy and very easy.
